Greek and Mediterranean cultures have embraced olives in their everyday life. Extra Virgin Olive oil is used as a cooking medium, while raw olives or treated, pitted olives are used as an ingredient for various recipes.

Earlier, Extra Virgin Olive Oil was extracted from olives, manually. However, with modernization and advancements in processing technologies, Extra Virgin olive oil extraction has now become easier. Around four to eleven kilos of olives are needed to extract a kilo of Extra Virgin Olive Oil. The oil is extracted by grinding the olives whole and then pressing the liquid out from the resultant mulch. Each olive releases a few droplets of oil.

Over the years, Spain has come to lead by way of number of olive trees, and is nowadays the world's leading olive and olive oil producer and exporter. Of the 2.1 million hectares (5.19 million acres) of olive groves, 92% are dedicated to olive oil production.  About 80% of the crop is concentrated in Andalusia, the largest olive growing area on the planet.
